Menu of the Week

Did you know
that two weeks ago I started a diet? And furthermore, did you know that one week ago I quit said diet? Isn't that silly? I'm not sure what I was thinking. Oh wait, yes I do. None of my clothes fit is what I was thinking. By the way, for those of you who have asked me how I "stay so small" whilst doing "all of that baking," there is your answer. I don't. The real part that I wasn't thinking about was that the end of winter is not an ideal time to quit eating. I'm depressed and cranky as it is. Did I really think it was a good idea to give up bread? Ahem.

Perhaps I'll resume my diet when spring is fully present and I can happily go outside when I'm so hungry that I'm considering eating the area rug. In the meantime maybe I'll try eating dessert only on Saturdays—yeah and probably Sundays too I mean, come on. (P.S. To my friends who have gone sugar free for extended periods of time: I am in awe of you. Seriously, I have absolutely no idea how you do it. I say again, absolutely no idea.

Here's a menu full of non-diet food for the week:

Twice baked potatoes + roasted asparagus + broccoli—The giant potatoes are the main dish in case your dad is wondering where the meat is. I also bake some extra potatoes to use in meals later in the week.

Potato + Spinach Frittata—The link is mainly for the basic method. This is one of those things that I always want to make but never think of baking the potatoes ahead of time.

Homemade Pizza—BBQ chicken style. I usually grab a rotisserie chicken, slather the dough with my favorite barbecue sauce, and add either red or green onions. This pizza is far and away one of our faves.

Crispy chicken + Teriyaki sauce + roasted cauliflower—I seem to be roasting all of our veggies lately.

Pecan crusted Tilapia with Honey glaze + Israeli couscous—this tilapia recipe is new to me and I can't wait to try it!

Dessert: Boston Cream Pie. Heaven! The base cake is the same recipe I use for the Lazy Daisey Cake. The magic happens when you cut that sucker in half, fill it with vanilla cream, and smother the top with chocolate ganache. You know I'll be telling you more about it later.

Oh my goodness, I would so love to post my menus, and pictures, when I'm back to making something other than frozen pizza and cheese/crackers for dinner! And I love reading yours - I'm a fan of food. :)

Okay. I started a diet on Friday. Dieting is hard! But much easier when you can eat whatever. you. want. for dinner! You heard me.

I bought a lovely jar of pesto at Costco to try a pesto pizza. I love homemade pizza.
